Phenomenal Carrot Cake with Cream Cheese Icing

The long-awaited cake my family dreamed of for a long time. What is it? It is a homemade, phenomenal carrot cake! This cake has an unmatched depth of flavor due to the sweet carrots, raisins, and the best addition: cinnamon.

Pair the carrot cake with Cream Cheese Frosting; you will have a cake that’s out of this world – phenomenal!

It was a busy weekend for me, baking not one, but two carrot cakes! YES! Two carrot cakes on the same day!
Our friend was celebrating her birthday, so I decided to bake her a birthday Phenomenal Carrot Cake. It was supposed to be a little (or rather a big) surprise!

Just a little advice…

Don’t take out all the utensils you have in the closet (spoons, forks, bowls, etc.). Why? Because the golden rule in the kitchen is: when you take one kitchen utensil, you wash it right away once you don’t need it anymore. Taking another, clean one seems not like a good idea. It will save you time, energy, and discouragement for the next baking session. We all go crazy seeing dirty dishes in the sink after we are done with cooking or baking. Trust me, it works!

What is Carrot Cake?

A carrot cake is not just a cake that includes carrots. The cake I baked also includes cinnamon and raisins. These additional ingredients help make the cake moist and be the best and phenomenal cake; it has to be moist. If you like walnuts, you can also use some of them. All the ingredients work together really well. 

What You Need To Make Carrot Cake?

  • A 9in Cake Pan
  • Bowls & Whiskers
  • An Oven
  • All ingredients mentioned below

Ingredients for Phenomenal Carrot Cake

4 eggs

(Remember I made 2 carrot cakes today that is why I had more eggs 🙂 )

350g sugar

385ml oil of any type eg. vegetable

1 teaspoon vanilla extract

3 flat teaspoon baking powder

1 teaspoon cinnamon

400g all-purpose flour (mix flour with cinnamon)

380g carrots finely grated

120g raisins

100g walnuts (if you want to)

Ingredients for Cream Cheese Frosting

550g powdered sugar

490g cream cheese at room temperature. It is extremely important!

125g butter at room temperature. It is extremely important!

1 1/2 tablespoon vanilla extract

How to Make Phenomenal Carrot Cake

If you’re ready to make this Phenomenal Carrot Cake dessert, you will be surprised how simple it is. Just follow these steps:

Mix wet ingredients and sugar

In a separate bowl, mix flour, cinnamon, and baking powder

Add dry ingredients into your wet ingredients and mix together until combined

Add in finely grated carrots and raisins. Mix until they’re thoroughly combined

Grease and line your 9in baking tin

Pour mixture into the baking tin and place in the oven at 350°F for about 75 minutes (the cake needs to look golden brown)

Cool in the tin for 10-15 minutes. The cake needs to be cool before frosting

How to make Cream Cheese Frosting

To make it, you’ll be surprised at how easy it is:

Put the cream cheese into a large bowl and cream it using an electric mixer on medium-high

Add butter and whisk it (remember the butter needs to have room temperature)

Add in slowly powdered sugar and vanilla extract until it is smooth and creamy

Chill a little if needed or start decorating the cake
